During the 13-month closure of The Disneyland Resort, many of us found ourselves wanting to bring the magic of Disneyland into our own homes by attempting to make some of our favorite eats and treats at home (or let’s be honest, we were simply buying Disneyland churros from Smart & Final).
If you were like me, you scoured through a stack of recipes straight from Disneyland’s City Hall. Or, if you were one of the lucky ones, you had already acquired a copy of Ashley Craft’s The Unofficial Disney Parks Cookbook, which features 100+ Disney-inspired recipes.
If you enjoyed Ashley’s Disney Parks cookbook, then you definitely need to put her newest book on your wishlist. Ashley is back with a brand new recipe book that hones in on the magical beverages and libations offered at the Disney Parks – everything from LeFou’s Brew at Magic Kingdom to the Jedi Mind Trick at Star Wars: Galaxy’s Edge and so much more.
What’s really great about Ashley’s book is that it weaves together a bit of her own history with Disney Parks and makes it very easy for someone who is not your everyday mixologist to create some really spectacular and tasty drinks that your family can enjoy (especially if you don’t have Disney trip on the horizon just yet!).
I really appreciated Chapter Two, titled “The Disney Mixologist’s Essentials” where Ashley really lays out the pantry staples that you should have on hand before tackling one of these recipes, including a series of recipes for syrups that will make an appearance in many of her recipes. The book is chock full of bright and beautiful photos of the drinks as well, so you have an inkling of how your drink should look (to make sure it matches the over-the-top presentation that Disney Parks are known for with their food and drink!)
Since many of our longtime readers are big fans of coffee and chocolate drinks, I am featuring two excerpts from Ashley’s book courtesy of Simon and Schuster – something to wet your whistle while you wait for your own copy!
Round 'Em Up Latte
Ingredients
- 10 oz hot coffee or coffee substitute
- 1½ oz cookie butter syrup (see recipe in book)
- 1½ oz sea salt caramel toffee sauce divided
- 1 cup ice cubes
- 4 oz whole milk
- ¼ cup whipped cream
- 1 tbsp rainbow sprinkles
Instructions
- Add coffee or coffee substitute to a medium bowl with cookie butter syrup and 1 ounce caramel toffee sauce. Stir until syrup and sauce are dissolved. Cover and refrigerate about 10 minutes.
- Pour ice into a plastic cup or glass. Add coffee mix and milk and stir. Top with whipped cream, remaining ½ ounce caramel sauce, sprinkles, and animal crackers. Insert a straw and serve immediately.

Black Spire Hot Chocolate
Equipment
- Medium saucepan
- Stand mixer
Ingredients
For Hot Chocolate
- 3½ cups whole milk
- ⅓ cup unsweetened cocoa powder
- 1 cup granulated sugar
- ⅛ tsp salt
- ⅓ cup water
- 1 tsp vanilla extract
- 4 tbsp brown sugar light
- ½ cup half-and-half
For Brown Sugar Whipped Cream
- 6 oz heavy whipping cream
- ¼ cup brown sugar light
- ⅛ tsp salt
- 1 tsp vanilla extract
- 2 drops purple gel food color
Instructions
- To make Hot Chocolate: In a medium sauce-pan over medium heat, combine milk, cocoa powder, granulated sugar, salt, water, vanilla, and brown sugar. Stir continuously until well mixed and hot, about 5-10 minutes. Pour into four large cups or mugs and add ⅛ cup half-and-half to each.
- To make Brown Sugar Whipped Cream: Combine cream, brown sugar, and salt in the bowl of a stand mixer and beat until stiff peaks form, about 3-5 minutes. Mix in vanilla and food color until well combined. Pipe or scoop ¼ cup whipped cream onto each mug. Serve immediately.
