I’m back with another great Disneyland recipe to share, and yet again it’s a keeper! I’ve got to say, I’ve been holding off on trying this one because “bran muffin” just doesn’t have that “ooh-yum-gotta-make-it-now” ring to it, at least to me. And honestly, I was prepared to call this my first flop and throw it out. But no! Disneyland surprised me again with a totally do-able, delicious breakfast treat! Here it is:
Disneyland’s Bran Muffin Recipe (Original)
Ingredients: yields 18* muffins
- 1 lb. 11 oz. Bran flakes
- 35 fl. oz. Whole milk
- 18 fl. oz Vegetable oil
- 3 fl. oz. Honey
- 6 fl. oz. Egg
- 1 lb. 8 oz. Brown sugar
- 1 Tblsp. Vanilla extract
- 15 oz. All-purpose flour
- 1 1/2 tsp. Salt
- 1 1/2 tsp. Cinnamon
- 1 1/2 tsp. Nutmeg
- 1 Tblsp. Baking soda
- 4 1/2 tsp. Baking powder
- 15 oz. Raisins
*jumbo-sized
Adapted Recipe, 1/3 original amount
Ingredients: yields 18** muffins
- 9 oz. Bran flakes (by weight)
- 12 fl. oz. Whole milk
- 6 fl. oz Vegetable oil
- 1 fl. oz. Honey
- 2 fl. oz. Egg (approx. 1 large egg)
- 8 oz. Brown sugar
- 1 tsp. Vanilla extract
- 5 oz. All-purpose flour
- 1/2 tsp. Salt
- 1/2 tsp. Cinnamon
- 1/2 tsp. Nutmeg
- 1 tsp. Baking soda
- 2 tsp. Baking powder
- 5 oz. Raisins (optional)

Instructions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, whisk together oil, honey, eggs, brown sugar, vanilla, and milk.
- Sift together flour, salt, cinnamon, nutmeg, baking soda, and baking powder over the wet mixture.
- Whisk together until just blended.
- Add Bran Flakes and fold until blended. Let the Bran Flakes soak in the mixture for 5 minutes.
- Fold in raisins and scoop into prepared muffin trays.
- Bake for 350 degrees for 15 minutes, then turn oven down to 325 degrees and bake for another 13 minutes, or until a toothpick check comes out clean.

- First and foremost, yes, I used Bran Flakes cereal. I researched other products going by the name “Bran Flakes”, and if there were other recipes out there that used Bran Flakes cereal in muffins, even tried to see if I could find anyone else who had made Disneyland’s Bran Muffins… it all pointed to yes, use the cereal. I’m still not 100% certain that’s what was meant in the recipe, but they taste darn good, so I’m going with it! (Maybe next time I would crunch up the flakes a little beforehand.)
- Because these muffins are regular-sized, I baked my muffins for 10 minutes on 350, then about 7 minutes on 325, and checked with a toothpick until they were perfect.
- I did not add raisins and I think they were great without them, but can see how they would be good with them, too.

Outcome & Opinion
These are certainly a unique bran muffin, but they are so delicious – and have a great texture. In fact, the husband told me he liked them more than anything else I’ve made in a while – to be fair, he absolutely loves Bran Muffins, but if he gave this one his seal of approval then I had better hang on to this recipe! It was a pretty quick process to throw them together and they baked quickly as well. I’m looking forward to having these with my morning coffee this week!
