Big Thunder Ranch was truly my hidden oasis at Disneyland and to say that my family and I miss it is an understatement. I will always cherish the special evening spent under the starts with Babes in Disneyland Editorial Team. It was a night full of laughter, music, shop-talk, and buckets o’meat.
I also loved sharing all that Big Thunder Ranch had to offer with my family and friends. The music, the character meet and greets, the goats (oh how we miss the goats), and of course the yummy food were such a highlight. It was this time last year, on a rainy weekend just like this one that my family and I were savoring our last meal at Big Thunder Ranch BBQ.
Luckily, on our very last trip we picked up the recipe for one of our favorites: Big Thunder BBQ Cornbread, and are super thankful to be able to recreate this easy and yummy recipe in the comfort of our own kitchen.
Recipe:
1 cup granulated sugar
1/2 cup salad oil (we used vegetable oil)
2 large eggs
1 tsp. pure vanilla extract
2/3 cup milk
2 cups all purpose flour
2 tsp. baking powder
1/3 cup milk
1/2 cup cornmeal
Combine sugar, oil, eggs, and vanilla extract. Mix on medium/ high for 2 minutes. Add 2/3 cup milk and mix until well blended. Add the flour and baking powder. Mix until well blended, about 4 minutes, scraping the bowl frequently. Add 1/3 cup of milk and cornmeal. Mix for 5 more minutes.
Pour into a greased 9×13 pan. Bake at 375 degrees until toothpick inserted into the center comes out clean (about 22-28 minutes). Serve with honey butter.
For a cute twist you could very easily use cookie cutters to make Mickey-shaped pieces of cornbread. We used two different sized round cutters to make Mickey-shaped butter.
