Today is National Pickle Appreciation Day! In honor of this day, we thought it’d be fun to share a special recipe from Disneyland: the fried pickles from Carnation Cafe on Main Street U.S.A! Although the Disney Parks Blog shared this recipe a few months ago, we actually got a first glimpse of it in the new “Delicious Disney: The Fresh Edition” cookbook that we picked up prior to the pandemic at Disneyland Park.
In full transparency, I’m actually not a fan of pickles, but I know that this dish is a HUGE hit among Disneyland fans, and we wanted to make sure YOU got your hands on the recipe!
Fried Pickles from Carnation Cafe at Disneyland
Equipment
- Skillet for frying
Ingredients
Fried Pickles
- 2 cups canola oil
- ½ cup flour
- 3 large eggs
- 1 cup panko bread crumbs
- ⅓ cup Parmesan cheese grated
- 16 ounces dill pickle spears 12 (should be uniform in size; cut in half widthwide if needed)
Zesty House Sauce
- 1 ½ tsp favorite Sriracha sauce
- ½ cup favorite ranch dressing
- 1 ½ tsp lime juice
- ⅓ cup mayonnaise
- ⅛ tsp coarse salt
- 1 pinch freshly ground black pepper
Instructions
For the Pickles
- Using caution, pour oil into a large skillet and heat to 365°F
- Place flour in shallow dish
- Whisk eggs until smooth in a small mixing bowl. Transfer to another shallow dish.
- Mix panko bread crumbs and Parmesan cheese together in another shallow dish.
- Lightly dredge each pickle spear in flour.
- Add pickle to whisked eggs, tossing gently to coat.
- Add pickle to bread crumb mixture to coat.
- Place breaded pickle on tray and repeat steps until all pickles are breaded
- Gently place the breaded pickles into the skillet and fry until golden brown, 4 to 5 minutes, turning occasionally. Remove from skillet and drain on paper towels. Serve immediately with zesty house sauce.
Zesty House Sauce
- Combine all ingredients in small mixing bowl, whisking well
- Cover and refrigerate at least 30 minutes before serving
